Do you love chocolate?

If you answered yes, then this recipe is for you. Valentine’s day is just around the corner, let’s play into the cliché. Whether you’re celebrating your loved ones or practicing self-love, I encourage you to whip up a batch of these delicious sweets. Indulge in their rich, fudge-y, and oh-so- chocolate-y goodness (with a hint of raspberry).

Vegan Dark Chocolate Raspberry Truffles

Active Prep Time: 30 Minutes.
Inactive Prep Time: 1 hour. Total Time: 1 hour 30 Minutes.


7 Ounces Dairy-Free Dark Chocolate (65-75%) *
3 Ounces Frozen Raspberries
2 Tablespoons Coconut Oil
1 Tablespoon Maple Syrup
1 Medium Avocado, Peeled & Pit Removed
1/4 Teaspoon Cinnamon
1/4 Teaspoon Salt
Optional: Shredded Coconut and Raw Cacao for dusting

* To make refined sugar free: stevia sweetened chocolate chips may be used. However, I am unsure how this would affect the overall taste and consistency of final the product.

To create a double boiler: Add about an inch or so of water to the bottom of a small saucepan. Cover with a lid and bring to a boil.
Remove lid and place a tempered glass bowl over the saucepan & turn heat to low.
Add raspberries, coconut oil, maple syrup and dark chocolate to the glass bowl.
Stir constantly, until the chocolate has melted. Remove from heat.
Add chocolate raspberry mixture, avocado, salt and cinnamon to a food processor.
Blend on high until smooth.
Place mixture back into the glass bowl and refrigerate for about an hour or until the mixture is stiff.
Using a 2 Tablespoon size scoop, scoop out and roll into balls: should have about 15.
Optional: Roll finished product in cacao powder or shredded coconut.

Store rolled truffles in the refrigerator, in an airtight container. Consume within 4 days (if they even last that long).
