Gluten free AND vegan can sometimes feel challenging. I recently went gluten free after having some digestive issues. The good news is the issues cleared up when I went GF (yay). Recently, Nikki asked on Instagram, what do you eat for breakfast, lunch, and dinner while both gf and vegan? So I’m laying out a little inspiration for any time of the day, showing you it doesn’t have to be complicated.

BREAKFAST:
+Oatmeal is quick and easy, top with whatever the season denotes, apples, bananas, cinnamon, this Ginger Pear Recipe a winner, or here’s 6 Ways to do Overnight Oats
+Premake these PB Bliss Balls and have them waiting for breakfasts
+Feeling savory? A Tofu Scramble will hit the spot
+These Fruit Burritos take a little extra time but are so worth it on a Saturday morning
+Smoothies are a great option for a quick nutritious breakfast, this one will keep you warm in the cold winter months
+If all else fails and you’ve run out of time, Larabars are great to have on hand becasue they fill you up and are made of real food

LUNCH:
+Anything in a bowl goes, like these Enchilada Power Bowls
+Use collards as a wrap, Rainbow Roll Ups (swap agave for honey), or go for a different flavor route with a Hummus Veggie Wrap
+These BBQ Chickpea Wraps are great made ahead of time & are a crowd pleaser
+Make a base like this Cabbage, Apple, & Kale Salad and throw beans, chickpeas, rice, and/or a sweet potato in a tupperware before heading to work & you’ve got a satisfying lunch
+A great make ahead dish, Quinoa Salad with Pumpkin Vinaigrette, complete the meal with crunchy greens or cabbage or both
+Find a good GF & vegan bread (this brand is great) and make Lentil & Chickpea Salad Sammies

DINNER:
+Make these completely GF Italian Sausages with a tomato sauce pasta and garlic bread for a full dinner
+Soup can easily be gf, my Split Pea Recipe is easy and great as leftovers, or try this Coconut Red Lentil Soup
+Go for the corn tortillas with Chili Cauliflower Chickpea Tacos
+Curries are especially tasty and serve as a good lunch for the next day as well, Creamy Coconut Lentil Curry or try my favorite Easy Vegan Dahl recipe
+GF pasta? Yes, its true! Weeknight Tempeh & Broccoli Pasta
+Crispy Baked Tofu Bowls with Blood Orange Sauce– it’s not as complicated as it sounds
