Welcome to Week 3 of the Live Planted Cooks Challenge.
Hopefully, you’re already feeling more confident in the kitchen with 2 recipes under your belt. Our health coach Kaitlyn Cashmere has created another delicious recipe this week inspired by practical, plant based, ingredients.  This week’s ”Cheesy” Cauliflower Mash & Mushroom Gravy’ or last week’s ‘Miso Dijon Brussels Sprouts’ would fair very well at the Thanksgiving table.  Don’t be afraid to volunteer to bring a dish (or two) this year!

Few foods are more comforting than mashed potatoes and gravy.

Although I could easily eat a large bowl of mashed potatoes on their own, I prefer to add extra vegetables. By doing this, I’m able to increase the amount of nutrients in the dish and I’m closer to meeting my daily vegetable quota. Not to worry, the addition of cauliflower to this mash doesn’t affect the consistency one bit!

These cauliflower mashed potatoes check all the boxes:

Creamy
Velvety
Satisfying
Topped with the savory and earthy mushroom gravy, this dish is lovely in every way.

Make this the next time you’re dining with meat eaters; they probably won’t even notice that the recipe is low fat, butter free, and cheese free!

‘Cheesy’ Cauliflower Mash & Mushroom Gravy

Serves: 4
Prep Time: 10 Min. Cook Time: 20-30 Min. (includes time to boil for mash)
Total Time: 30-40 Min (to prepare mash and gravy)

INGREDIENTS

Cheesy Cauliflower Mash
1 Medium Head Cauliflower
2 Pounds Gold Potatoes
1 Cup Unsweetened Almond Milk
1 Tablespoon Lemon Juice
4 Tablespoons Nutritional Yeast
1 Teaspoon Salt
Black Pepper to taste
Green Onion to garnish

Mushroom Gravy
8 ounces Baby Bella Mushrooms
3 ounces Shiitake Mushrooms
3 Medium Shallots
1 Teaspoon Dried Thyme
Black Pepper to taste
1 1/2 Cup Low Sodium Vegetable Stock
1 Tablespoon Organic Cornstarch
1/2 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
2 Teaspoons Tamari

INSTRUCTIONS

Cheesy Cauliflower Mash
Wash cauliflower and potatoes (peel potatoes if you prefer)
Cut cauliflower into florets and dice potatoes into a similar size
Add cauliflower and potatoes to a large saucepan and cover with cold water
Cover with a lid, and bring to a boil.
Uncover, let boil for 10-15 minutes until potatoes and cauliflower are tender
-While potatoes and cauliflower are cooking, prepare mushroom gravy (see below)
Once potatoes and cauliflower are tender, drain and add back to the pan
Add almond milk and mash together, blend with immersion blender or blend with
mixer (add more almond milk until desired consistency is reached)
Stir in lemon juice, nutritional yeast, salt and pepper
Serve with mushroom gravy, garnish with green onions

Mushroom Gravy
Lightly rinse, remove woody stems and dice mushrooms
Peel and dice shallots
To a medium saucepan on medium-to- medium low heat: add mushrooms, shallots,
thyme, and black pepper
Sauté for about 8 minutes, until onions translucent and mushrooms softened
(If the pan starts to dry out- add water to the pan, a tablespoon at a time)
Add mushroom mixture to a blender with remaining gravy ingredients, blend until
smooth
Transfer back to the saucepan, bring to a medium heat and cook for 2-5 minutes
until gravy slightly thickens, stirring occasionally
Serve on top cheesy cauliflower mash

Store in the refrigerator in separate airtight containers. Consume within 5 days.
